Preheat oven to 425 degrees Fahrenheit. Line two baking sheets with parchment paper.
In a bowl, mix gnocchi, onions, cherry tomatoes, yellow and orange peppers, broccoli, oil, garlic powder, salt, black pepper, thyme, and sausages.
Divide between the prepared baking sheets and cook for 20 minutes.
Remove from the oven, toss, and cook another 10 minutes.
Garnish with parsley and serve.

From my experience, sheet pan gnocchi is delicious , but only when eaten fresh, once reheated it becomes chewy and tough. But maybe others have found different

Nope, you put them on the sheet pan raw and then bake them.
