Mini Smashburger Tacos with Smash Sauce

My family is obsessed with burgers, and these are the most fun take on a burger that I’ve made—ever. I love how easy they are to prep, and how quickly it all comes together, not to mention the flavor. Just wait till you try a hot one!

Directions

  1. In a small container, whisk together the mayonnaise, relish, hot sauce, salt, pepper, and liquid smoke (if using). If you want a smooth sauce, blend it. Set aside.

  2. In a medium bowl, mix the ground meat, sugar, soy sauce, ketchup, salt, pepper, paprika, and garlic powder. I do this with my hands (wearing disposable gloves).

  3. Working with one tortilla at a time, place a mound of the meat mixture (about 1/4 cup) in the center and press down so that the meat covers the entire tortilla. Press extra firmly around the edges.

  4. Heat a griddle or a large skillet and drizzle oil onto it. When the pan is hot and the oil is shimmering, begin cooking the tortillas: In one swift motion, flip the tortilla onto the

    griddle/skillet so the meat faces down. Cook two to three minutes, until the meat is cooked through. Using a wide spatula, carefully flip and cook another one to two minutes, until golden.

  5. Top with smash sauce, lettuce, tomatoes, pickles, red onions, and caramelized onions (if using).

Notes:
Prep ahead: Follow steps 1–4 as directed. Transfer to a container, separating each layer of tacos with parchment paper. When ready to serve, reheat in a single layer in the oven/skillet/plata. Plate individually and add the toppings right before serving, or bring everything to the table for a make-your-own smashburger taco party!
