Heat up the oil in a large skillet over medium/high heat. Add the kielbasa pieces and cook for eight to 10 minutes, mixing occasionally.
Once the kielbasa has a nice crust, remove from skillet using a slotted spoon and set aside. Add the onions and salt and lower the heat.
Cook the onions for about five minutes, then add the peppers and cook for an additional three minutes.
In the meantime, mix together all the sauce ingredients in a small bowl and set aside.
Once the onions and peppers are slightly cooked, add the kielbasa back in. Add the sauce. Mix well and cover. Lower the heat to the lowest and allow to simmer for 20 to 30 minutes.
Remove from heat and serve over rice.

This dish freezes well. Remove from freezer and allow to thaw on the countertop. Place in 350-degree-Fahrenheit oven, covered, for 30 to 40 minutes.
