Let the pastry thaw to room temp, then roll it out and cut into 16 squares with a pizza cutter. Cut each cheese stick into four pieces and place one piece into each square.
Roll into balls and seal well so the cheese doesn’t leak out. Brush with beaten egg and place on a Gefen Parchment lined tray. Bake at 400 degrees Fahrenheit for 20–25 minutes until golden and crispy.
Mix melted butter with garlic and parsley and brush over the hot puffs before serving. Top with Parmesan and serve hot with marinara sauce for dipping.
