Meat Lasagna Soup

It’s funny how some super-popular recipes are the most traditional, hearty recipes. I have been making lasagna soup since my kids were little. It’s a delicious meal in one!

Directions

  1. Oil the noodles so they don’t get sticky. Cover well and set aside.

  2. In a soup pot, heat oil.

  3. Add onions and sauté for about five to seven minutes until starting to brown.

  4. Add meat; brown the meat and break it up.

  5. Add diced and crushed tomatoes and tomato paste and stir well.

  6. Add salt, pepper, and beef stock.

  7. Bring to a boil and then let it simmer for 45 minutes.

  8. Add the lasagna to the pot before serving.

Tips:
If you don’t have beef stock, you can use two teaspoons beef consommé mixed with four cups hot water.

Was excited to try this recipe. It just likes flavor so I had to add more salt, garlic powder, onion powder, basil, parsley to flavor it up.
