Date Crunch Bark is a layer of dates, covered with chocolate and almond butter, and sprinkled with toppings. You can switch up the toppings to suit any occasion, but the pistachios and pomegranate here are perfect for Tu Bishvat, the Jewish New Year for Trees.

Directions

  1. Melt the chocolate chips with coconut oil and stir until smooth. (Put chocolate in a freezer ziptop bag in boiling water.)

  2. Press dates in an even layer on a baking sheet lined with Gefen Parchment Paper. Drizzle tahini/almond butter over the top. Sprinkle your choice of dried fruit/nuts. Drizzle melted chocolate over the top and sprinkle pomegranate seeds over the chocolate.

  3. Place in the freezer for a few minutes to set. Break or cut into squares and enjoy.
