Slightly crispy on the outside and soft on the inside, these blondies were a real winner in my house.

Directions

  1. Preheat oven to 350 degrees Fahrenheit. Line an eight-inch square pan.

  2. In a bowl of an electric mixer fitted with whisk attachment, beat oil and sugars until smooth.

  3. Add egg, yolk, flour, and baking powder and mix until just combined.

  4. Add crushed cookies and chocolate chips and mix to combine.

  5. Pour into the prepared pan. Bake for 35–40 minutes, until an inserted toothpick comes out clean. Center should still be a bit soft. Let cool.

  6. Combine glaze ingredients in a small bowl. Whisk until smooth. Slice the blondies into squares and then pour glaze on top.

If freezing, freeze without glaze and defrost before glazing.
