Avocado and Tomato Carpaccio

This may not look like an ordinary salad, but it is definitely one of those salads that will have everyone licking their fingers. This salad plate is so beautiful, and at the same time a true classic that can be
enjoyed by everyone at the table.

Directions

  1. On a serving plate, fan out avocado slices in a large circle.

  2. Layer two rows of colored cherry tomato and shallot slices over the avocado, going inward.

  3. Drizzle generously with olive oil and sprinkle with coarse salt.

  4. Sprinkle black pepper around the edges of the avocado slices.

  5. Add a strip of lime zest down the center of the dish, and fill the center of the salad with basil (if using).
