Perfect for Shavuos, but even better for supper, this is Rena's "favorite recipe of all time!" Presenting... her mom's famous spinach quiche. This meal was a staple in Rena's house growing up - and Rena's mom is going to show us how it's done!

Spinach Cheese Quiche
20 ounces (560 grams) frozen chopped spinach, thawed and drained well
1 medium onion, diced
8 ounces shredded mozzarella
2 9-inch pie shells, storebought or use the recipe below
1 cup milk
2 eggs
1/2 teaspoon dried dill, such as Pereg
sliced muenster cheese or more shredded cheese, for topping

To Alice Finer. Rena as do I, live in Israel. There is a full line of vegetables that are grown bug free and packaged prechecked. There are precut mixed salad vegetables of many varieties. Also herbs. Parsley, cilantro, scallions, celery, lettuce, cabbage, spinach, etc.
Some say to soak for three minutes in soapy water, and then rinse well (the salad mixes not included). But after that there is no need to visually check, unless bugs float to the top of the soapy bath. I have been using these products for years and have not found infestation.

Thanks for the simple and elegant recipes. I am always thrilled when I see you have a new one as you really know how to simplify cooking and use easy to find ingredients.

I am wondering why many of the videos (in general) do not discuss bug checking more often.
I noticed that in the tomato dish the scallions you used were curled up and I was wondering if you had sliced them lengthwise first, as is often recommended for the checking process.
I know that parsley is often sold prechecked and perhaps there are places that sell prechecked scallions.
Even just mentioning it briefly during the video or referring viewers to the subject elsewhere on the Kosher.com site could be a real Zikui Harabbim.
