Cornish Hens with Fragrant Rice Stuffing
6 David Elliot Rock Cornish Hens
3 cups Jasmine rice
1 onion, finely diced
1 full head garlic, sliced in half
3 sprigs thyme
1 cup honey, divided
1/2 cup Heaven & Earth Date Syrup
2 cups baby carrots
3 scallions, chopped
6 fresh dates, pitted and chopped
2 portobello mushrooms, finely chopped
1 cup button mushrooms, finely chopped
1 can Glicks Chickpeas, drained
1 cup Gefen Pitted Olives
1/2 cup pomegranate seeds
zest of a lemon
2 cups chicken stock
1/2 cup fresh parsley, chopped
