Spicy Tuna Spring Rolls
While you can use store-bought spicy mayo, this is one item that I prefer to make on my own so that I can use light mayonnaise.

Salt and black pepper, for sprinkling

Fresh salmon, sliced into strips

Cream cheese (pareve or dairy, depending on your minhag)

1 (24 ounce) package chopped broccoli
Salt, for sprinkling
black pepper, for sprinkling
Dried basil, for sprinkling
8 ounces mozzarella cheese
2 large red onions, sliced and sauteed

Corned Beef Sandwich Spring Roll
Do you have a piece of leftover corned beef roast in your freezer? Remove it from its sauce and place it in a baking pan. Cover with water and cover the pan. Let it cook in the oven for a couple of hours (make sure it’s always covered). Remove it from the liquid and it’s ready for shredding.
Whole Grain Dijon mustard
Corned beef cold cuts, cut into strips OR corned beef roast (see note above)
Sauteed onions
Red Cabbage Slaw:
11 ounces shredded red cabbage
1 teaspoon oil
1-2 teaspoons sugar or Splenda
1-2 tablespoons vinegar
1 teaspoon salt
