Sarah Abitan is a native of the Alsace region of France. She trained as a pastry chef in Paris, and returned to Strasbourg to open her own patisserie, called GATÔ, which means cake. She starts her day at 4am every day, and the days are pretty intense. She runs pretty much everything from the making of the pastry, to managing the shop. She keeps herself in shape with kickboxing. She is also lactose intolerant, so she really worked very hard to come up with delicious pastries that would be lactose free, and have less sugar and fat. Her goal was to create pastries that would be light and delightful, with a lot of complexity and flavors—And of course an amazing aesthetic. Her philosophy? Good things come to those who wait.
