I’ve shared this many times with friends and family and all agree it’s one of the best soups they ever tasted.

 

I wanted to make my favorite veggie soup but didn’t have much in the house.


I had onions and zucchini and then I thought to add corn. The result was the best soup ever!!

Ingredients

Main ingredients

  • onions

  • olive oil

  • zucchini

  • sweet canned corn

  • salt

  • pepper

Directions

Prepare the Soup

1.

Cut onions. Doesn’t have to be small pieces as you’ll purée it at the end either way.

2.

Sauté onions in a little oil.

3.

When clear add salt and pepper

4.

Add chunks of zucchini.

5.

2 cans of sweet corn with liquid.

6.

Water to cover.

7.

Cook for a while then jzujz it.
