Cake
3/4 C canola or avocado oil
1 C sugar
1/2 C confectionery sugar, sifted if lumpy
2 large eggs
1 tsp vanilla extract
3/4 C whole wheat flour
3/4 C cocoa powder, sifted if lumpy
1/2 tsp sea salt
1/2 C chocolate chips, preferably mini
Adjust rack to middle of oven and preheat to 350.
Line an 8×8 square pan with parchment paper or foil.
In a mixing bowl, mix oil, sugars, eggs and vanilla til combined.
Stir in flour, cocoa and salt until a smooth batter forms.
Fold in chocolate chips.
Pour batter into pan and bake for 28-30 minutes or until a tooth pick in middle comes out clean.
Do not overbake!
Cool completely before cutting and serving
(needed more baking time. also lowered the sugar slightly)
