If you’re looking for a healthier way to enjoy a treat, these whole-grain cookies fit the bill.
Yield: 30 (3-inch) cookies
3/4 cup applesauce
1/2 cup oil
1 and 1/4 cups brown sugar
1/2 cup sugar, or sweetener of your choice
2 eggs
2 egg whites or 1/3 cup Haddar Egg Whites
1 and 1/2 teaspoons vanilla extract
1 and 1/4 cups wheat germ
1 cup Kedem Apple Juice
6 cups oats
1 teaspoon baking powder
1 teaspoon baking soda
1 cup Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and spray with nonstick cooking spray.
Add all ingredients to a bowl in the following order: applesauce, oil, brown sugar, sugar, eggs, egg whites, vanilla, wheat germ, apple juice, oats, baking powder, baking soda, and chocolate chips. Mix well. The batter will be a bit wet, so let it sit for at least 10 minutes.
Drop large spoonfuls of batter (about the size of a small egg) onto the prepared baking sheet and press down to shape cookies. Bake 16 to 20 minutes.
