Watermelon Radish and Avocado Salad

Ingredients

Salad

  • 1 large watermelon radish, peeled and finely diced

  • 1/2 red onion, finely diced

  • 1 firm but ripe avocado, diced

  • 2 carrots, peeled and finely diced

  • 1 English or 4 Persian cucumbers, finely diced

  • 1/2 package fresh parsley leaves, cleaned and chopped

Dressing

Directions

In a bowl, combine all salad ingredients. In a small bowl, combine dressing ingredients and mix with salad.

Notes:

You can dice all the vegetables ahead of time. Because they are finely diced, they will keep well. Just add the avocado and dressing fresh. Note that because this salad is finely diced it can’t be prepared on Shabbos, but you can definitely dice up to a day ahead.
