Farro is a nutty whole grain that offers a more complex nutritional profile than white rice or pasta. Combined with the bite of arugula, sweet watermelon, salty feta cheese, and crunchy toasted almonds, it makes for a very tasty salad. A drizzle of balsamic takes it over the top. Main ingredients

  • 8-ounce bag arugula

  • 1/2 cup farro, cooked

  • 2 cups seedless watermelon, chopped

  • 1/4 cup feta cheese, cubed

  • 1/4 cup toasted slivered almonds

  • 1 small red onion, thinly sliced

Directions

Prepare the Salad

1.

Add all ingredients to a large bowl, then gently toss to combine.

Drizzle the top with more balsamic glaze if desired.
