My mother has a ritual in which she prepares simanim platters for close friends and neighbors in honor of Rosh Hashanah. Included in her wonderwork are various patties of different flavors and colors. These are a take on some of her masterpieces.
Yield: 6 patties
2 eggs
3 tablespoons flour
1 tablespoon oil
1/4 teaspoon black pepper
1 teaspoon salt
4 vacuum-packed beets
3 cups shredded carrots
1 and 1/2 cups chopped spinach, defrosted, plus 1 leek, washed well
Preheat oven to 350 degrees Fahrenheit.
In a bowl, whisk eggs, flour, oil, pepper, and salt until smooth.
In a food processor fitted with the S-blade, process vegetable of your choice for 20 seconds.
Combine processed vegetables with egg mixture.
Line a baking sheet with parchment paper and spray with oil.
Form patties, flatten, and place on sheet.
Bake for 15 minutes or until firm.

Can they be frozen? How do you reheat them on yom tov?
Hi Genendel,
Yes! Cook them first, let them cool completely, and then freeze them.
Before the meal, bring them straight from the freezer and reheat them in the oven at about 400/425F for 10-15 minutes uncovered.
