Here’s one “kugel” that’s full of protein instead of starch. This meatloaf incorporates potatoes, carrots, and zucchini.
You might also enjoy this classic meatloaf by Brynie Greisman.
1 pound ground beef, chicken or turkey
1 potato, grated
1 carrot, grated
2 medium zucchini, coarsely grated
3 eggs
1/2 teaspoon salt
Mix all ingredients well and pour into a greased 8- x 10-inch baking pan. Bake at 375 degrees Fahrenheit for one and a half hours.
