When Chanie approached me with this Shabbos Nachamu project, I was excited to hear who I would be cooking for, and I was looking forward to the challenge. I was thrilled to hear that I would be cooking for the amazing Sima Kazarnovsky. Of course, since there has to be a bit of a twist in a challenge, my dish had to be a starch side dish, and if you know Sima, she isn’t much of a starch person; she loves vegetables. Since Sima loves Asian flavors, I created a fried rice loaded with fresh vegetables and Asian flavors. Hopefully, by the time this goes to print, we’ll all be in Yerushalayim with Mashiach, and I’ll be able to prepare my dish for her in person.
2 cups basmati rice, cooked according to package directions
5 tablespoons oil, such as Tonnelli Avocado Oil, divided
6 eggs
1/4 teaspoon salt
1 medium onion, diced
1 fancy zucchini, unpeeled and diced
1 yellow squash, unpeeled and diced
1 red pepper, diced
8 ounces (225 grams) white button mushrooms, quartered
16 ounces (450 grams) frozen peas and carrots, not defrosted
4 tablespoons Tuscanini Extra-Light Olive Oil
5 cubes Gefen Frozen Ginger
1 cube Gefen Frozen Garlic
1/2 cup Glicks Soy Sauce (use a wheat-free version for gluten-free)
3 tablespoons store-bought chili-garlic sauce
Heat two tablespoons oil in a 12-inch (30-centimeter), deep nonstick sauté pan.
Mix eggs and salt and pour into the pan; it should be like a big omelet. Cook until set, then remove from the pan and dice.
To prepare the vegetables, heat three tablespoons oil in the same pot. Add the onion and sauté for three minutes. Then add the rest of the vegetables and cook for another eight minutes.
Meanwhile, place all sauce ingredients in a bowl and mix.
Add the cooked rice to the pot and mix with the vegetables. Pour the sauce over the rice and veggies and mix to incorporate. Cook for another five minutes, then add the eggs and mix.

Hi Tzivi,
Chili garlic sauce can be found at your local grocery store. If not, you can always substitute it with a hot sauce another favorite sauce that you enjoy.
