These classic kosher cupcakes with pleasant vanilla flavor are prepared with oil instead of butter, making them a delicious and easy parve (dairy free) treat. This recipe is perfect for lactose-free diets or kosher keepers who prefer non-dairy desserts they can enjoy after a meat meal.
2 and 1/2 cups flour
1 and 1/2 cups sugar (regular sugar)
2 tablespoons Gefen Vanilla Sugar or Bakto Golden Vanilla Cane Sugar
1 tablespoon plus 1 teaspoon Haddar Baking Powder
3/4 cup oil
1 cup orange juice
2 eggs
Preheat oven to 350 degrees Fahrenheit.
Sift together the flour, sugars, and baking powder.
Add oil, orange juice, and eggs and mix until thoroughly combined.
Line a 12-cup cupcake pan with paper cupcake liners and fill. Bake for 25 minutes.
Remove from pan. Cool on rack. Decorate with frosting or whipped cream and sprinkles.

Can I use a regular mixing bowl, or do I need a mixer

I would substitute the bakto for vanilla extract.
