This is a fabulous cookie! It looks pretty and tastes like a maple-glazed doughnut. Yum!
Yields 72 cookies
1 cup vegetable shortening
1/2 cup margarine
2 cups brown sugar (packed)
2 large eggs
1 teaspoon Gefen Vanilla Extract
1 teaspoon maple flavoring
3 cups Mishpacha All Purpose Flour
1/2 teaspoon salt
2 teaspoons baking soda
2 cups white chocolate chips
1/2 cup chopped pecans
1/4 cup margarine
4 cups Gefen Confectioners’ Sugar
1 teaspoon maple flavoring
3 tablespoons non-dairy coffee creamer or Gefen Soy Milk
72 whole pecans
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
Cream shortening, margarine, and brown sugar.
Add eggs. Beat in flavorings.
Add dry ingredients and mix. Stir in chips and pecans.
Drop by tablespoonfuls, two inches apart, onto baking sheet. Bake for eight to 10 minutes, until golden.
Cream margarine and confectioner’s sugar.
Beat in flavoring and enough creamer to get spreading consistency.
Frost the baked cookies. Top each cookie with a pecan half.
