These melt-in-your-mouth treats combine two delicious flavors. Almonds or walnuts add a nice crunch.
2 and 1/2 cups flour
7 ounces (200 grams) margarine (use soy-free, if needed) or butter, melted
1/2 cup brown sugar
1 egg
1 teaspoon Haddar Baking Powder
1 teaspoon Gefen Vanilla Extract
3 tablespoons coffee granules (optional)
1/2 cup slivered almonds or 1/2 cup walnuts, coarsely chopped (optional)
In a mixer bowl, combine flour, margarine, sugar, baking powder, and vanilla extract. Blend until the mixture is crumbly. Add egg and blend for another minute until the dough is uniform.
To make coffee-flavored cookies, add the coffee granules and blend for another minute. Transfer the batter to a bowl.
If desired, add almonds or walnuts and mix in by hand, as so not to crush the nuts. Cover with plastic wrap and refrigerate for an hour.
Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
Roll out the dough thinly. Cut into squares using a cookie cutter. Place the cookies on a Gefen Parchment Paper lined baking sheet and bake for 15 minutes or until golden.

Are you supposed to dissolve the coffee granules before you add them to the recipe?
The coffee does not need to be dissolved, especially if you Elite granulated coffee. If you use freeze dry, you might want to dissolve it in a very small amount of water. The batter is not a wet batter.
