These melt-in-your- mouth treats combine two delicious flavors. Almonds or walnuts add a nice crunch.
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
3 tablespoons coffee granules (optional)
1/2 cup slivered almonds or 1/2 cup walnuts, coarsely chopped
2 and 1/2 cups flour
7 ounces (200 grams) margarine or butter, melted
1/2 cup brown sugar
In a mixer bowl, combine flour, margarine, sugar, baking powder, and vanilla extract. Blend until the mixture is crumbly.
Add egg and blend for another minute until the dough is uniform.
To make coffee-flavored cookies, add the coffee granules and blend for another minute.
Transfer the batter into a bowl.
Add almonds or walnuts and mix by hand, as so not to crush the nuts.
Cover with plastic wrap and refrigerate for a hour.
Preheat oven to 350 degrees Fahrenheit.
Roll out dough thinly.
Cut into squares, or shape of your choice using a cookie cutter, place the cookies on a parchment-lined baking sheet and bake for 15 minutes until golden.
