A quick and easy chopped turkey salad with almonds for crunch and dried cherries for a touch of sweetness. Perfect for a light lunch or supper. Recipe by Jeff Nathan for Empire® Kosher. Sponsored by Empire Kosher Poultry.
4 cups cooked Empire® Kosher Natural* Turkey, rough chopped
1/2 cup red onion, diced small
1/2 cup celery, diced small
1/2 cup slivered almonds, toasted
1/2 cup sundried cherries
1/4 cup fresh basil, rough chopped
1 tablespoon poppy seeds
2 cups Gefen Mayonnaise
2 tablespoons Tonnelli Apple Cider Vinegar
kosher salt
freshly ground black pepper
In a large bowl place the cooked chopped Empire® Kosher Turkey, red onion, celery, almonds, cherries, basil and poppy seeds. Toss to mix.
Using a rubber spatula, fold in the mayonnaise and apple cider vinegar. Season with salt and pepper as needed.
Serve with whole grain bread, lettuce and sliced tomatoes.
