Every year I make some elaborate dish using fruits for Tu Bishvat. One year it was olive infused chicken. One year I made a fruit infused meat. My kids were not happy lol. This year I decided to make them something I know they would like it and eat!
3/4 cup oil
1 cup brown sugar
1/4 cup white sugar
1 teaspoon Gefen Vanilla
2 eggs
2 cups Mishpacha Flour
1/2 teaspoon Gefen Baking Soda
1/2 teaspoon salt
An assortment of chopped up fruit and nuts; I used raisins, almonds, cashews, dried apricot chopped, dried mango chopped
In a mixing bowl. Mix the first five ingredients together and add the the rest.
Place spoonfuls on a Gefen Parchment lined cookie sheet and bake 350°F for 12 minutes.
