It’s like going to Hawaii without leaving the comfort of your home. This salsa is a tropical vacation in a bowl. Yields 2 pounds
1 medium pineapple, peeled and finely diced
2 medium mangos, peeled and finely diced
1 small red onion, finely diced
juice of 2 limes (or about 4 tablespoons Heaven & Earth Lime Juice)
2 teaspoons Manischewitz Kosher Salt
1 bunch fresh parsley, finely chopped (optional)
Place all the ingredients into a large bowl and mix well. Store in an airtight container in the fridge for up to one week.
