About two years ago I discovered the beauty of galettes. They are so easy to make, they look gorgeous, and you can literally add anything to the mix—I’ve made sweet galettes with apples and cinnamon and savory ones with mushrooms. This tomato galette it literally bursting with flavor—you have delicious juices running all over the pan. The combination of caramelized onion and tomatoes is perfection!
2 teaspoons oil, such as Gefen Canola Oil
1 medium onion, sliced into rings
1 Gefen Puff Pastry sheet
3 large tomatoes, sliced thinly
1/2 cup Parmesan cheese
1/2 teaspoon pepper
1/2 teaspoon salt
Preheat oven to 400 degrees Fahrenheit.
In a frying pan over medium heat, heat oil. Add onion slices and sauté for 20–30 minutes, until soft and golden.
Line a cookie sheet with Gefen Parchment Paper. Place puff pastry on the cookie sheet.
Arrange the tomatoes in a circle in the middle of the puff pastry sheet. Add the onions on top. Sprinkle with salt and pepper.
Trim the edges of the puff pastry to create a circle, leaving about one and a half inches on the sides. Fold over the edges to create a rim.
Sprinkle cheese over the onions and tomatoes.
Bake for 20 minutes.
