I love the combination of feta and avocado. The tomatoes add a nice splash of color and texture as well.
8 ounces Gefen Orzo, cooked according to package directions
2 scallions, sliced
2 cups cherry tomatoes, halved
1/2 cup good quality feta cheese (such as Ta’amti), crumbled
1 avocado, diced
1/2 cup Tuscanini Olive Oil
2 tablespoons Tuscanini Lemon Juice
1 teaspoon sugar
3 cloves garlic, crushed or 3 cubes Gefen Frozen Garlic
1/2 to 1 tablespoon kosher salt (to taste)
1/8 teaspoon freshly ground black pepper
Place orzo in a bowl. Whisk dressing ingredients together and pour on top of orzo. Add scallions, tomatoes, and feta and mix. Add avocado right before serving to prevent browning.
