This garlicky tomato dip is a nice change of pace from the usual mayo-based spreads. Make sure to select the best quality tomatoes you can find, since they’re the star of the show here!   Yield: 1 and 1/2 to 2 cups

Ingredients

Tomato Dip

  • 4 soft Holland tomatoes, peeled (see tip)

  • 8 cloves garlic or 8 cubes Gefen Frozen Garlic

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 cup oil

Directions

Prepare the Tomato Dip

In a food processor fitted with the S-blade, blend tomatoes, garlic, salt, and pepper on high speed until completely puréed.

With the processor running on low speed, add oil and blend until well incorporated. Taste and add salt and pepper as needed.

Tips:

To peel tomatoes, bring a pot of water to a rolling boil. Score an “x” in the bottom of each tomato and boil for 30 seconds. Remove from the pot and starting from the “x,” peel away the skin under running water (to make the tomato easier to handle).
