Every so often, I used to come across a tomato soup and simply look the other way; I never liked tomato soup. But as I get older, I am amazed at how my taste changes—and tomato soup has definitely become a new favorite on my list! This soup is delicious, easy to make, and great for the cooler weather.
1 medium onion, minced
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
1/2 cup orzo (or rice)
28 ounces Tuscanini Crushed Tomatoes
28 ounces Tuscanini Tomato Juice
1 tablespoon brown sugar
1 teaspoon black pepper
1 teaspoon salt
1 cup milk
In a soup pot over medium heat, sauté onions and garlic for about 10 minutes, until they start to brown. Add orzo and sauté for three minutes.
Add crushed tomatoes, tomato juice, sugar, and spices. Cover and let simmer for 45 minutes to one hour.
Add milk. Mix well and serve warm.
