This meal couldn’t get any easier if you tried! I was thrilled to develop a recipe that uses such handy ingredients and is so tasty and quick to prepare.

Make the Tilapia

1.

Combine all ingredients aside from tilapia in a large pot and bring to a low boil.

2.

Add tilapia to sauce, laying out the fillets so that they’re as submerged in liquid as possible.

3.

Cover pot and cook for 5–10 minutes, or until fish flakes easily with a fork.

4.

Remove fish from pot and spoon sauce over it to serve.

Tips:

You can cook your side in the same sauce that you used for the fish.  Simply remove the fish to a foil pan and cover to keep warm.  Add any pasta side, such as couscous or orzo, to the pot, along with a bit more water, if necessary, and cook until soft.  Serve alongside fish.

Notes:

If you’re using frozen fish, you can increase the cooking time to about 20–25 minutes; it’ll taste just as good!
