1 pound Gefen Confectioners’ Sugar
2 tablespoons margarine
4 tablespoons water
3 drops peppermint oil
1/2 pound baking chocolate
Over double boiler, combine first 4 ingredients until smooth.
Divide into 3 parts. Add 2 drops of food coloring to each part. Place in tightly closed plastic bag until ready to use.
Melt chocolate. Spread melted chocolate onto bottoms of molds. Freeze for 5 minutes.
Fill with a thin layer of each color mint filling. Top with chocolate. Freeze for 1 hour.
