What if you want to send something more personal to add to your relative’s or friend’s simcha? This recipe is easy and quick, no prior experience required, just great-looking results.
These cupcakes use a simple batter. There’s no need for layering creams or fancy extracts, yet the recipe’s simplicity does not compromise on taste.
3 eggs
1 cup sugar
1 tablespoon Gefen Vanilla Sugar
1 stick margarine
2 cups Glicks Flour
2 teaspoons baking powder
1/2 cup orange juice
1 carton frozen whipped topping, such as Kineret, defrosted
1 packet Gefen Vanilla Pudding powder (see note)
gel food coloring
pearlized sprinkles or any mini topping (crushed sandwich cookies, coconut flakes, sugar crystals, etc.)
bon bon or any elegant candy, candied nut, chocolate, Oreo, Lotus cookie, etc.
Preheat oven to 350 degrees Fahrenheit.
Using a hand blender, mix the eggs, sugars, and margarine. Add flour, baking powder, and orange juice.
Mix well and pour into muffin pans. Bake for 25 minutes.
Beat the whip with pudding powder. When the whip is slightly stiff, add in a few drops of food coloring to match your color scheme.
Continue beating until the whip is stiff and all the color is incorporated.
Using any size star tip you have, pipe the whip onto the cupcake. Start on the outside, and circle your way inward, going round and round till you reach the center, and finish with a peak.
Drizzle pearlized sprinkles. Place a bon bon in the center of your frosting and admire your gorgeous work.
Attach a note that reads: “Homemade with love and care. So excited to join in your simcha!”
