If you want to get away without the patchke that usually comes along with frying this year, try these. You will not slave away grating potatoes or shaping dough, your kitchen won’t become a wreck, and your family will still feel nurtured and loved.
Or, make latkes and doughnuts, but try these too! They’re bound to become one of your new Chanukah favorites.
Yield: 10-15 balls
250 grams/9 ounces quark cheese (“gevinah levanah” in Israel)
1 egg
2 pinches of Gefen Salt (if you like things saltier, add more)
3 heaping tablespoons Glicks Flour (add or subtract flour to achieve a thickness you like, as the original consistency of the cheese is not always the same)
Mix by hand.
Preheat two inches of oil over high heat until bubbling. Lower flame.
Use a spoon or cookie scooper to drop in the cheese mixture.
Fry one to two minutes until golden on both sides. Remove from pan and drain on a paper towel-lined plate.
These taste delicious fresh and warm, but are also great at room temperature.
