Thai Peanut Salmon and Green Beans

I am always on the lookout for easy one-pan dinners, and this one is not only easy, but also delicious! Such great flavors, but it all comes together in just 30 minutes!

Ingredients

Thai Peanut Salmon and Green Beans

  • 1 teaspoon fresh or 1 cube frozen crushed ginger, such as Gefen

  • 2 tablespoons low sodium soy sauce

  • 1 tablespoon Heaven & Earth Lime Juice

  • 1 tablespoon rice vinegar

For Topping

  • scallions, sliced

  • roasted peanuts, chopped

Directions

1.

Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.

Place the salmon in the middle and surround with green beans. Drizzle about one tablespoon of sesame oil on the green beans.

Mix together the peanut butter, peanut oil, garlic, ginger, soy sauce, lime juice, and rice vinegar until smooth. Spread over the salmon and drizzle over the green beans. Mix the green beans around so they are coated in the sauce.

Place in oven at 400 degrees Fahrenheit for 20 minutes or until cooked to 145 degree Fahrenheit internal temp.

5.

Remove from oven. Sprinkle the salmon with sliced scallion and the whole pan with chopped peanuts. Serve alone or over rice.
