Ingredients

Salmon Teriyaki with Broccoli

  • 1 package Beleaves Chopped Broccoli

  • 4 slices salmon

  • teriyaki sauce (recipe below)

  • sesame seeds

  • 1 package teriyaki noodles (see note)

  • 1 teaspoon toasted sesame oil

  • 1 tablespoon Glicks Soy Sauce

  • 1 cup shredded red cabbage

  • 1 avocado, sliced

  • 2 Persian cucumbers, sliced thin

Teriyaki Sauce

  • 2 cloves garlic, minced

  • 1 tablespoon honey

  • 2 tablespoons Glicks Soy Sauce

  • 1 teaspoon toasted sesame oil

  • 1/2 teaspoon cornstarch

  • 1/2 teaspoon ground ginger

Directions

1.

Place a bag of chopped broccoli on a cookie sheet. Toss with some salt and spray with cooking spray. Bake on 500 degrees Fahrenheit for 40 minutes or until the tips of the broccoli are crisp. Set aside.

2.

While the broccoli is in the oven, prepare the sauce for the salmon. Combine all ingredients.

3.

Lower the oven temperature to 350 degrees Fahrenheit. Place the salmon on a lined baking sheet. Brush the salmon with the teriyaki sauce and sprinkle the seeds on top.

4.

Bake for 25 minutes.

5.

Meanwhile, prepare the teriyaki noodles according to package directions. Once done, toss with one teaspoon toasted sesame oil and one tablespoon soy sauce.

6.

Place the noodles in the bottom of a bowl, arrange the salmon on top with the vegetables around it. Garnish with additional sesame seeds.

Notes:

Feel free to swap teriyaki noodles for rice, quinoa, lettuce or any of your favorite bowl fillers. You can add or swap any of your favorite vegetables: shredded carrot, edamame, chopped tomatoes, or scallions would work well.

Hi Stacey,
Teriyaki noodles are typically regular spaghetti (from wheat) with teriyaki sauce, but you can actually substitute them in this recipe for anything else you’d like, such as rice, quinoa, lettuce or rice noodles.

I hope this is helpful!
