I love the bright orange of the sweet potato in this dish in addition to incredible sweet-and-savory flavor combo.
2 medium sweet potatoes, cubed
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
4 capons
1 tablespoon Gefen Mustard
1 tablespoon Gefen Honey
1 cup flavored panko crumbs, such as Pereg
Cook sweet potatoes in water until fork tender. Drain and mash.
Mix in salt, onion powder, and garlic powder.
Place a heaping tablespoon of sweet potato mash on the bottom of each capon and fold around it. Place skin-side up in baking dish
In a small bowl, mix honey and mustard.
Brush on the tops and under the skin of each capon. Sprinkle panko crumbs on the tops.
Bake covered at 375 degrees Fahrenheit for 45 minutes and uncovered for 15 minutes.
