Sweet Potato Latkes with Spicy Peanut Dipping Sauce

Ingredients

Latkes

  • 3 medium/ 2 large sweet potatoes, shredded

  • 2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic

  • 3/4 cup plain flour

  • 2 eggs

  • 1 and 1/2 teaspoons salt

  • 1 teaspoon Pereg Cumin

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon chilli powder

  • oil, for frying

Spicy Peanut Dipping Sauce

  • 1/4 teaspoon ground ginger

  • 1/2 teaspoon mild chilli powder or 1/4 teaspoon hot chilli powder

Directions

Prepare the Latkes

1.

Pat dry the shredded sweet potatoes to absorb as much moisture as possible.

Add all ingredients into a large bowl and stir until they’re all incorporated.

3.

Pour just under an inch of oil into a wide shallow pan and heat on a medium flame until feels warm when you wave your hand over the pan.

4.

Spoon the mixture into the hot oil and fry the latkes about a minute on each side. Serve warm.

Notes:

  Latkes can be reheated in the oven at about 225°F/110°C.
Fried latkes can be stored in the freezer. Leave to defrost before reheating.

Prepare the Dipping Sauce

1.

Mix all ingredients and serve on the side of the warm latkes.

Traditional and Different These were amazing! The smell and taste were divine! A twist on a classic… definitely a keeper!
