A fabulous way to dress up everyday vegetables.
5 tbsp balsamic vinegar
3 tbsp olive oil
salt and pepper to taste
1/2 tbsp dried dill
1/2 tbsp dried parsley
5 tbsp honey
3 sweet potatoes, peeled and cut into long wedges
1 cup carrot batons
1 green and 1 yellow pepper, sliced
Combine all dressing ingredients in a bowl and mix well.
Put vegetables in the bowl and coat well.
Spread onto a lined baking sheet and bake on 215° c for 20 mins or till sweet potatoes are soft.
