I am a real fan of fresh and don’t freeze much, but desperate times call for desperate measures. I discovered that if I froze my raw roast in this marinade, the results were beyond. You will love it too, guaranteed.

Ingredients

Roast

  • 1 (3–5 pound) French roast

  • salt, to taste

  • pepper, to taste

Directions

Make the Roast

1.

Place all marinade ingredients in a ziplock bag. Mix together very well. Wash and dry roast and place in marinade. Allow to marinate for at least an hour, or overnight in the refrigerator.

2.

Preheat oven to 325 degrees Fahrenheit (170 degrees Celsius). Transfer meat and sauce to a 9 x 13-inch roasting pan. Sprinkle with salt and pepper. Cook uncovered for 18–22 minutes per pound. You may also freeze the meat raw in the marinade. Defrost and then bake.

can I cook the meat from this recipe low and slow? I would like to leave it in overnight on YT. thannks!

I think you should be able to cook it low and slow, however, I would make sure this is enough liquid so it doesn’t dry out.
