You would never guess these super addictive treats contains vegetables. (Not that we’re claiming they’re dietetic…)

 

They make an interesting hostess gift.

 

Yields 40 pieces

Ingredients

Main ingredients

  • 2 and 1/2 teaspoons baking soda

  • 1 tablespoon Gefen Vanilla

  • 2 tablespoons coconut oil (I use filtered so there is no coconut flavor)

Directions

Prepare the Candy Brittle

1.

Grease a half sheet pan and set aside.

2.

Add sugar, corn syrup, and water to a heavy-bottom saucepan on medium heat.

3.

When temperature reaches 290 degrees Fahrenheit on a candy thermometer add the bag of veggie sticks, stirring often until the temperature reaches 295 degrees.

4.

Remove from heat and quickly mix in baking soda, vanilla, and coconut oil.

5.

Pour onto the prepared baking sheet and spread to 1/4 inch thick. Let cool completely.

6.

Break into pieces and store in an airtight container.
