This salad is a very different kind of combination, but it really works! Keep all the components separate until it’s ready to be served.
12 ounces Kineret Breaded Cauliflower
8 ounces spring mix lettuce (or romaine)
1 cucumber, diced
1/2 mango, diced
handful of cashews, halved
1/4 cup sugar
1/8 cup hot water
1/2 cup orange juice
1 tablespoon Glicks Soy Sauce
1/4 cup oil
1/2 teaspoon salt
pinch of Pereg Black Pepper
Bake breaded cauliflower according to package directions. Keep them in the oven a bit longer so they get crispy.
Cut lettuce into smaller pieces.
In a large salad bowl, layer lettuce, cucumbers, mango, cauliflower, and cashews.
In a bowl, dissolve sugar in water. Add the rest of the dressing ingredients and mix to combine.
Pour dressing over salad.
