When it comes to summer fruit, I take full advantage! I buy as much as possible and use it in anything and everything! This is my latest treat. Yield: 1 9-inch square pan
3/4 cup oil, such as Gefen Canola Oil
3/4 cup sugar
1 egg
1/4 cup lemon juice plus zest of 1 lemon
2 cups Glicks Flour
1/2 teaspoon baking powder
1 cup diced fresh or semi-frozen strawberries
1 tablespoon lemon juice
1 teaspoon hot water
1 teaspoon oil
Preheat oven to 350 degrees Fahrenheit. Line a square baking pan with Gefen Parchment Paper.
In a bowl, beat the oil, sugar, and egg until light and frothy (approximately three minutes). Add the rest of the ingredients except the strawberries. Fold the strawberries into the batter. The batter will be thick.
Pour batter into the pan. (Tip: Using a real pan makes a huge difference in the quality of the cake.) Bake for 30 minutes. Allow to cool.
In a small bowl, combine icing ingredients. Pour over the blondies.
