Crepe cakes are a really fun Passover trend, and this copycat of Faigy Grossman’s Strawberry Crepe Pie shows how to make your holiday preparations that much easier by using store-bought Gefen crepe batter – these days, who isn’t looking for a shortcut? Watch this showstopper come to life in the accompanying video.
1 (32-ounce) bottle Gefen Perfect Crepe Batter
2 pounds frozen strawberries, defrosted
3/4 cup confectioners’ sugar
1 (16-ounce) carton Gefen Non-Dairy Whipped Topping
Prepare crepes according to package directions.
Blend together strawberries and confectioner’s sugar until completely combined.
Lay one crepe on a cake platter. Spread whipped topping over, then a layer of strawberry puree, then another crepe, more whipped topping, and more puree. Continue layering until desired height is reached.
In a separate bowl, whip up the whipped topping.
