Ingredients

Salad

  • 1 box Bowery Mehadrin Crispy Leaf lettuce

  • 3 scallions, cleaned and thinly sliced

  • 1 small watermelon radish, thinly sliced (preferably on a mandoline)

  • 1/2 cup sugar snap or snow peas, halved lengthwise

  • 1 avocado, thinly sliced

  • 1/4 cup feta cheese

  • 1/4 cup sunflower seeds

  • a handful of fresh mint leaves and dill sprigs, mixed

Dressing

  • 1/4 cup oil (light flavored)

  • juice of 1 lemon (approximately 2 tablespoons)

  • 1/4 cup white wine vinegar or red wine vinegar

  • 1/2 clove garlic, minced

  • 1/4 teaspoon black pepper

  • salt, to taste

Directions

1.

Combine the dressing in a jar and whisk to combine.

2.

Toss the lettuce with the salad ingredients.

3.

Pour the dressing and mix well just before serving.
