This quick-fix salad is perfect for weekday or Shabbat meals with ingredients already found in most pantries and fridges.

1 can diced hearts of palm, liquid drained
1 can Glicks Chickpeas, liquid drained
1 can sliced black olives, liquid drained
1 jar Tuscanini Sun-Dried Tomatoes, liquid drained, diced
1 (5-ounce) bag of arugula (or any lettuce in the fridge)
1/4 cup Tuscanini Balsamic Vinegar
1/4 cup fresh lemon juice or Tuscanini Lemon Juice
1 cup mashed ripe avocado
2 tablespoons warm water
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
salt, to taste
pepper, to taste
Add all dressing ingredients to a bowl and whisk to combine.
Combine vegetables and lettuce in a large salad bowl. Pour dressing over and toss gently.
