Spinach cooked into a souffle with eggs, cheese and bread crumbs makes a great dairy side dish, brunch or even a light dinner.
1 pound frozen spinach
2 tablespoons Gefen Mayonnaise (or use sugar-free mayonnaise)
2 eggs
1/2 pound cottage cheese
3/4 pound shredded cheese
1/2 cup Gefen Bread Crumbs
Combine all ingredients, mixing well. Pour into 5- x 8-inch pan. Bake at 350 degrees Fahrenheit for 45 minutes.
