Finger foods are great, especially when they are topped with spinach and cheese!
Yield: 24 mini pizzas
1 package frozen mini pizza doughs
1 onion, chopped
1 tablespoon oil, such as Gefen Canola Oil
1 (16-ounce) bag frozen spinach
4 eggs, beaten
1 teaspoon Haddar Kosher Salt
8 ounces shredded mozzarella cheese, divided
Preheat oven to 350 degrees Fahrenheit. Line two baking trays with Gefen Parchment Paper and place frozen mini pizza doughs on them, about two inches apart.
In a medium-sized skillet, heat the oil. Add chopped onion and sauté until golden, about two minutes. Add the frozen spinach and salt. Sauté for about 15 minutes or until spinach is completely thawed. Remove from flame and add eggs and mozzarella cheese, reserving a quarter cup for sprinkling. Mix until well combined.
Spoon heaping tablespoons of spinach mixture onto the center of each pizza dough. Sprinkle tops with reserved mozzarella cheese.
Bake in preheated oven for about 15 to 20 minutes.
