This is perfect for the Purim spirit! So good and so refreshing, with a hint of alcohol in honor of the occasion.
1 can spiked seltzer (like Truly)
2 cups ginger ale
1/3 container rainbow sorbet (such as Klein’s), semi-defrosted
Pour all ingredients into a container and mix until sorbet is dissolved. Freeze overnight. (Note: It won’t be completely frozen in the morning since alcohol does not freeze.)
When ready to serve, scrape with a fork and serve in mini glassware. Spoon a drop of the liquid over the granita for more flavor. Serve immediately.
